When cooking vegetables, try cooking them in chicken broth. Chicken broth is an excellent base to use when preparing vegetable dishes that helps keep them from sticking and gives them some flavor. Chicken broth is usually available for relatively low prices at most grocery stores.

Invest in a knife sharpener to make cutting any ingredient simple. Dull knives are difficult to use and they are dangerous to cut with too. When you use a dull knife, you often have to force the blade through whatever you are cutting. Using a sharp knife is much easier and safer.

Reheating oily dishes in your microwave can have disastrous results. To avoid the mess, warm the dish in an oven instead. Microwaves have such intense heat that they separate oil, which gets hot the quickest, from other ingredients that heat more slowly. Baking, however, gently and evenly warms up the entire dish, keeping the ingredients together.

Do you plan on cooking with fresh basil? Fill an empty glass with fresh basil. Fill the container with enough water to cover the stems. Place the glass of basil leaves on the counter in your kitchen, and watch it keep its freshness for weeks. You can even grow new basil plants if you feel like changing the water every day or so. The stems will sprout roots; that's the wonder of plant life. To encourage growth, you can trim some of the leaves to use in your cooking.

When unpacking your groceries, place any unripened fruits in perforated bags. Ethylene gas is produced when fruits ripen. If you put them in a perforated plastic bag, the air can circulate and assure that the gas is retained, keeping the fruit fresh and tasty.

You have probably felt guilty for pitching moldy fruits before. Do you wonder if you can still use the fruit by simply cutting out the part that seems overripe? Half-rotten fruit is not save worthy. There is no way to use this food without compromising your health. You should dispose of any rotten fruit, as mold penetrates further than the naked eye can see. Rotting food can carry a number of pathogens, so it is best to avoid the risk.

Tofu and beans are excellent sources of protein. Both of these protein-rich foods are available at most grocery stores. Try pan-frying tofu with some interesting seasonings and you will have a tasty alternative to meat. To add some tasty protein to your plate, boil some beans with a touch of herbs for seasoning.

You might be very stressed out about preparing for an important family meal. Instead of panicking, try and do all your prep work the night before. For any dishes that can be made ahead, do so; for all others, prep the ingredients in advance.

A great way to use random vegetables in your refrigerator is to make some fried rice. Believe it or not, day-old rice actually has the best texture and flavor, but you can improve the texture of fresh rice by cutting back on water. Saute your meat and vegetables until crisp-tender. Then add the cold rice to the pan along with soy sauce, ginger, garlic, and other spices.

You should remove any excess fat from your soup or stew. If you notice an excess of fat in the stew or soup, you need to allow it to completely cool and then the fat will rise to the top of the dish. On a spoon, place a cube of ice and lightly skim it around the surface of the soup. The fat will be attracted to the cube of ice. You can also use a piece of paper towel to skim the fat off the top.

If you are getting ready to cook for a big family get together, it is probably causing you a good amount of stress. Instead of succumbing to panic, do as much of the prep work as possible on the preceding night. This means setting out measurements, ingredients and marinades.

Fresh garlic is ideal when preparing dishes that call for garlic. It's well-known that fresher garlic equals sweeter taste. If it isn't soft, bruised or shriveled and it has some firm skin then you know that the garlic is fresh.
